Here is a wonderful recipe that I shared a few years ago – start planning your Thanksgiving dinner TODAY!  🙂


Since we are on the brink of Thanksgiving, less than a week away, I have the ultimate recipe for you to make for your Thanksgiving feast – Corn Casserole! Yummy!!! This fabulous side is so delicious and super easy to make!

Go to the grocery store and buy these ingredients NOW – they are so simple, you may just have to open your pantry and fridge!

1 box of Jiffy box corn muffin mix, 8.5 oz
1 stick of butter
1 cup of sugar
1 14 1/4 oz can creamed corn
1 14 1/4 oz can regular corn
1 8 oz. reduced fat sour cream
2 eggs

Mix everything together and place into a 13×9 pan sprayed with Pam, cook at 350 degrees for 40 minutes, until top looks set and golden.

This is one of my family’s favorite, well, this and jellied cranberry. I serve this throughout the year when I make a ham and it makes an excellent pot luck dish!!. Another family tradition we have is to say what we are thankful for this year before we have dinner – such a nice way to start our meal.
